In Revival: Johnny Got His Cakes

I wrote a while ago about a really inexpensive brunch option, the Johnnycake or hoecake. Here is a vegan update, using the same recipe slightly tweaked and now with optional actual corn!

So, it's the same method as before, with the cornmeal and the boiling water and such. This time, have an extra 1/4 c. boiling water standing by after the 10 minutes is up. Then, before you throw these puppies in the pan, add the extra water along with 2 tsp. olive oil to loosen things up. Stir in about 1/3 c. frozen corn (or fresh, I suppose, if it's handy; this is optional).

Now, to the pan with another 2 tsp. of olive oil instead of butter. Mmm... delicious. And cheap!

Title inspiration: Johnny Got His Gun is, among other things, a dramatic film written and directed by Dalton Trumbo, based on his own novel (written in 1938). Released 14 May 1971 at the Cannes Film Festival.
